Grandmom’s Orange Cookies

Or at least as close as we have gotten… a must for Christmas!

Ingredients

Cookies

  • 1/2 Cup Shortening Don't use butter!
  • 2 Eggs
  • 1/2 Cup Orange Juice
  • 1 Tbsp Grated Orange Peel
  • 1 1/2 Tsp Baking Powder
  • 1/2 Tsp Salt

Icing

  • 2 Cups Confectioners Sugar
  • 1/4 Cup Orange Juice
  • 2 Tbsp Butter
  • 1/2 Tsp Salt

Instructions

Cookies

  • Preheat oven to 350 degrees.
  • Cream shortening and sugar until light and fluffy, then add eggs one at a time, beating well.
  • Beat in orange juice and zest.
  • Combine flour, baking powder, and salt, then gradually add dry mixture to the creamed mixture.
  • Drop cookie mixture by teaspoonful onto ungreased baking sheets- they don't spread much, but be sure to leave some room in between.
  • Bake for 10-14 minutes, until edges just begin to brown. Cool on wire racks.

Icing

  • Melt butter with orange juice in the microwave, in a medium sized bowl, approximately 1 min (30 second increments).
  • Add in confectioners sugar, mixing until smooth.
  • Dip cooled cookies in icing, then allow to cool- the icing should harden.
