Grandmom’s Orange Cookies
Or at least as close as we have gotten… a must for Christmas!
Ingredients
Cookies
- 1/2 Cup Shortening Don't use butter!
- 2 Eggs
- 1/2 Cup Orange Juice
- 1 Tbsp Grated Orange Peel
- 1 1/2 Tsp Baking Powder
- 1/2 Tsp Salt
Icing
- 2 Cups Confectioners Sugar
- 1/4 Cup Orange Juice
- 2 Tbsp Butter
- 1/2 Tsp Salt
Instructions
Cookies
- Preheat oven to 350 degrees.
- Cream shortening and sugar until light and fluffy, then add eggs one at a time, beating well.
- Beat in orange juice and zest.
- Combine flour, baking powder, and salt, then gradually add dry mixture to the creamed mixture.
- Drop cookie mixture by teaspoonful onto ungreased baking sheets- they don't spread much, but be sure to leave some room in between.
- Bake for 10-14 minutes, until edges just begin to brown. Cool on wire racks.
Icing
- Melt butter with orange juice in the microwave, in a medium sized bowl, approximately 1 min (30 second increments).
- Add in confectioners sugar, mixing until smooth.
- Dip cooled cookies in icing, then allow to cool- the icing should harden.
