Cucumber, Pepper and Arugula Salad


2 Cucumbers, peeled, seeded and sliced
1 red bell pepper, julienned
3 oz. Fresh arugula or other greens
1 carrot, julienned
3 oz. Feta, crumbled


Toss cucumber, pepper arugula and carrots together. Top with feta, caramelized balsamic and infused oil.

Infused Oil

1 cup finely chopped herbs
cup canola oil
pinch salt

Combine oil, herbs and salt in blender and liquefy for 1 min.

Force contents thru strainer leaving very little of herb pulp behind. Store in fridge.

Carmelized Balsamic Vinegar

2 Cups balsamic vinegar

In sauce pan over medium low heat reduce vinegar to about 2/3 cups (about 2 hrs.)

Remove from pan and chill.
