Grandmom Ricci's Pizzeles


3 eggs, beaten
3/4 cup sugar
3/4 cup butter, melted (1 1/2 sticks)
1 1/2 to 2 cups flour
1 teaspoon baking powder

2 teaspoons vanilla
1 teaspoon anise flavoring


Add and beat ingredients in the order listed. Use the smaller amount of flour for a thinner pizzele. Drop by rounded spoonful onto the center of a preheated pizzele grid. Close the lid and allow to cook until steaming stops-about 30 seconds. Remove carefully with a fork. Place on a towel to cool and store them in an airtight container.
Notes: The first one or two sometimes do not come out very well but stay with it and you will be rewarded
