Orzo and Chickpeas


1/2 lb orzo
1/4 cup olive oil
juice of 1 lemon
1 14-16 oz can chickpeas
2 tbsp fresh oregano or 1 tsp dried
1 clove of garlic, minced
S & P to taste
5 oz feta or goat cheese


Cook orzo according to package directions. Meanwhile, mix olive oil and lemon juice in a medium size bowl. Add in oregano and garlic and mix. Strain orzo when finished-add to bowl along with chickpeas. Allow to cool slightly, then add cheese. Can be served room temperature or cold (best).
Notes: We like to add red pepper flakes on it. Have also added canned tuna or salmon. Would be lovely with grilled salmon served on top. Very versatile-have also added spinach to still warm orzo so it would wilt slightly. We make this at least once a week now.
