Parsley Carrots


1 tbsp olive oil
6 largish carrots
3 toes garlic
lots of parsley


Heat the olive oil in a medium saucepan. Slice the carrots diagonally, crush the garlic, and add them to the pan. Stir everything to get it nicely coated, turn heat to medium low, and cover. The carrots will cook in their own steam. After about 8 minutes, mash the garlic with a fork, and add parsely. Continue to cook the carrots until you think they're soft enough.
