Roasted Pasta Sauce

Ingredients

Tomatoes
Onions
Mushrooms
Peppers red, green, yellow or hot
Celery
Choices of spices
garlic cloves

Instructions

Amounts of veggies depend on taste and amount of sauce desired. Wash, cut all veggies up, put in glass not metal pan.Bake ocvered at 400 for 2-3 hours stirring occasionally.Cool then puree. This is wonderful! I use a variety of tomatoes and onions and if desired other veggies could be used such as celery or eggplant. Experiment to find your favorite blend of veggies and spices! Carrots were said to change color to orange so keep in mind taste and colors of added veggies.
