Super Spudnik Soup


2.5 lbs baking potatoes
4 strips bacon, diced
3 T butter
1 medium onion, diced
1/4 cup all-purpose flour
6 cups milk (I used a mixture of 2% and whole)
1/2 tsp paprika
1 cup cheddar or mozzarella cheese, divided
1 bunch green onions, sliced
1/2 cup sour cream
pepper, to taste
1 tsp salt


Preheat oven to 400 degrees. Prick potatoes with a fork and bake for 1 hour, turning once. When finished, skin potatoes and set aside. Melt butter over medium-high heat and add bacon. Cook until crispy-remove bacon with slotted spoon and dry over a kitchen towel. Add onion to pan and saute for about 5 minutes. Add flour and stir until paste-like. Begin whisking in milk gradually. Cook over medium-high heat until it thickens and boils. Add potatoes, 3/4 of cheese, and salt and pepper. Cook until cheese melts. Lower heat and add in sour cream and 1/2 of the green onion. Cook until heated through but prior to boiling. Serve with remaining cheese, reserved bacon, and reserved green onions as garnish.
