Grandmom Ricci's Filled Cookies


7 eggs
1 1/2 cups sugar
1/2 lb. butter
6 teaspoons baking powder
2 teaspoons vanilla
6 cups flour
8 ounces fruit preserves
8 ounces pineapple
1/2 cup walnuts, chopped
1/2 cup cherries, chopped


Whip sugar and butter together. Add eggs, vanilla, and baking powder. Add flour. Filling: Mix preserves, pineapple,walnuts, and cherries over low heat. Store in refrigerator. Cut the cookike dough in 1-1/2 diameter rounds less than 1/8" thick. Place a samll amount ofhte filling in the middle of the dough and pinch the edges of the dough together to form a bow tie. Pnich tightly. Cook in 350 over for about 10-to015 minutes. An alternative filling consists of 2 tablespoons of sweetened cocoa, 8 ounces of grape jelly, 1/2 cup of apple butter, 1 cup of walnuts crushed, orage zest, and 1/2 of a pound cake crumbled. This alternative was more frequently used by Grandmom.
