Chocolate Covered Cherries


1 - 16 oz & 1 - 10 oz Marachino Cherries w/Stems (undrained)
3 T Butter/Marg - softened
3 T. Light Corn Syrup
1/4 t. Salt
2 C. Powdered Sugar
12 oz Bag Semi-Sweet Chocolate Chips
1 T. Shortening


Drain cherries & pat dry - set aside. Combine butter, syrup & salt in a medium mixing bowl, stirring well; Stir in powdered sugar - knead in bowl until smooth. Shape 1/2 t. sugar mixture around each cherry. Place on baking sheet lined with waxed paper. Chill 2 hours or until firm. Combine chocolate & shortening in double boiler. Bring water to a boil, reduce to low and cook (and stir!) until melted. Dip Cherries in Chocolate. Chill until firm.
Notes: I use Milk Chocolate instead of Semi Sweet. The sugar filling will eventually turn to a clear liquid if kept at room temp.
