Delicious Tuscan Meatballs


1 package frozen spinach, thawed
1 lb ground turkey
1 egg
1 cup seasoned bread crumbs
1 cub grated Parmesan
2 handfuls of shredded mozzarella
1 tsp garlic salt
Black pepper to taste
1-2 tbsp olive oil
12 oz spaghetti
1/2 or 3/4 cup white wine (you can use chicken broth, but it won't taste as good)
3 tbsp butter
2-3 cloves garlic
Parmesan cheese, to serve


Heat oven to 350. Squeeze water out of spanich. Mix 1st 8 ingredients. Shape into meatballs. Heat oil in frying pan over medium-high heat. Brown meatballs, about 2-3 minutes. Once browned, move pan into oven or place on baking sheet. Bake for 20 minutes to finish cooking. Once meatballs are baking, cook spaghetti. When meatballs are done, transfer to plate to keep warm. Deglaze pan with wine (or broth, you wimps!) Add butter and garlic (this is the best smell in the world-seriously, if J. Lo were to market this as a perfume, I might go for it)and let thicken slightly. Once pasta is done, drain. (Recipe calls for reserving one cup of water to add to sauce-I find this unnecessary-just don't drain the pasta too well). Add pasta to sauce in pan. Toss to coat, then add meatballs. Sprinkle with Parmesan and serve.
