Mom Smith's Jewish Apple Cake

Ingredients

6 Apples peeled and 1/4-inch dice
2 teaspoons cinnamon
1/2 cup sugar
3 cups flour
2 cups sugar
1 cup vegetable oil
4 eggs
1/4 cup orange juice
1 tablespoon baking powder
2-1/2 teaspoons vanilla
1 teaspoon salt

Instructions

Preheat oven to 350-degrees. Mix apples, cinnamon, and sugar in a bowl and set aside. Mix remaining ingredients in a large mixer (warning batter is heavy). Butter the inside of an angle food pan (note that the "jewish" part of this would require that you use oil - I like the butter better). Pour half the batter into the pan. Arrange half the apple mixture over the batter. Pour the remainder of the batter over the apples, and then top with the second half of the apple mixture. Cook in oven for 1-1/2 hours or until golden brown. Remove from oven and let sit for 5-minutes before removing from pan to cool
Notes: This was always my favorite birthday cake.

KLF note: I replaced the 1 cup oil with 3/4 cup apple sauce and 1/4 cup plain yogurt to lighten it up some. Was delicious!
