Peppered Pimiento Cheese


(8 ounce) package cream cheese, softened
cup mayonnaise
1 garlic clove, minced
1 teaspoon sweet pickle relish, drained
2 cups (8 ounces) shredded sharp cheddar cheese
1 (4 ounce) can chopped green chilies
cup chopped pecans, toasted (optional)


Beat first 4 ingredients until smooth. Stir in cheddar cheese and remaining ingredients. Cover and chill up to 8 hours. Serve with pita chips or crackers. Makes 2 cups.
Notes: Reduced-fat cream cheese, light mayonnaise, and reduced-fat sharp cheddar cheese may be substituted.
