Elaine Smith’s Lobster Pie


8 oz. cream cheese
1 cup sour cream
1 tsp. salt
1 egg
2 Tbs. chopped fresh chives
1 Tbs. fresh dill, minced
1 Lb. fresh mushrooms
Dash pepper
1 Lb. cooked lobster meat (any shellfish may be substituted)
2 sticks melted butter
1 box phyllo leaves


Mix cheese and sour cream. Add salt & egg. Blend in chives, dill and pepper. Add seafood to mixture. Saute mushrooms in butter. Strain off liquid. Butter a 10” pie plate. Melt the 2 sticks of butter & brush onto 4 phyllo leaves. Place leaves in bottom of plate, overlapping (edges extend over sides). Put in half of seafood mixture and half mushrooms. Repeat layering procedure: leaves, seafood & mushrooms. Fold extended edges of leaves inward so that top is completely covered. Bake at 375 degrees for 35 minutes. Serves 12 to 14.
